When we talk about bean-to-bar, we refer to chocolate made straight from the cocoa bean. While many chocolatiers purchase their chocolate ready-made before melting it down to use in different ways, we do things differently.

Our Unique Process Behind a Bean-to-Bar Chocolate

After sourcing and importing our beans, we hand sort them all before roasting, winnowing, grinding, and conching it for up to 80 hours. Last, we age it and eventually temper it by hand into the beautiful bars in our store.

Beans Straight From Peru

Some clients have asked us why we exclusively use beans from Peru, and the answer is simple. Sourcing is one of, if not the most important aspect of bean-to-bar chocolate making. While there is an incredible array of cacao found worldwide, we sampled more than 30 and settled on Peru.

We use a variety of organic origins from within Peru to take our chocolate-making a step further than other chocolatiers.

Terroir – How the Environment Affects the Crop

While we certainly wanted to showcase the beautiful Peruvian cacao, we also wanted to give our clients insight into the terroir on the chocolate. Each origin we work with tastes completely different, and we invite all to taste for themselves. Peru has much to offer as the world’s leading producer of organic cacao, and we look forward to expanding on this ideology in the future.
