Tasting notes: Piedmont hazelnuts, floral herbs, dulce de leche
THE CHOCOLATE:
An extremely rare Colombian Criollo species, found deep within the jungle by farmer Jonathon who was sent on a mission to find rare heirloom cacaos for quality cultivation. Our B6 variety is the cream of the crop, boasting a 95% white bean count, making it one of the rarest varieties in the world. White cacao is famous for its milk chocolate look, and its incredible nutty and gentle flavour profile. It’s an experience a craft chocolate enthusiast can not miss!
The Cacao Betulia team began planting their farms in a unique way, by cloning genetics from the single pods that were discovered deep within virgin jungle. Originally they had around 20 varieties, ranging from B1-B20, however only 4 were chosen to develop into fully planted areas, based on their overall quality and white bean count. Surrounded by farms with CCN-51, Betulia had to be careful where they placed their plantations to avoid cross pollination, meaning that on their 200 acre farm, only about 40 are currently used for cacao.
B6 is a special bean, only around 3 metric tonnes are produced annually, meaning it is extremely difficult to attain. Chocolate makers using this bean frequently win awards, and after experimenting with it ourselves its not hard to see why. We never originally planned to make finished chocolate with this bean as it is non Peruvian, however given the personal connection and the quality of the chocolate we couldn’t resist.
