Yuzu is a citrus fruit, prized for its intense flavour. As a core part of Japanese culture, the fruit has seen success being grown around the world and is popular in many Japanese dishes and high-end restaurants. NZYuzu, run by a husband and wife team of Neville and Junko Chun, are New Zealand’s first, and premier growers, producing the fruit organically at their beautiful orchard in Levin.
We have been working with their fruit since 2018, when Johnty used Yuzu to earn his first competitive victory and gold medal in a petit four competition. For the past three years, we have been tweaking the confit process for application in chocolate and are thrilled to be able to showcase such a rare and potent ingredient, adequately dubbed the King of citrus.
