Tasting notes: Citric cacao pulp, sweet currants, marcona almond
THE CHOCOLATE:
In the arid, desert-like climate of Piura, planted carefully along riverways that carry nutrient-rich water from the Andes to the ocean, lies Joe’s plantation of ancient cacao trees. Constant sun and low humidity allow this cacao to consistently express itself as one of the very best in the world.
Piura is a desert. The production of cacao in a desert is scarcely found anywhere else on the planet, as it requires both a source of water, and a genetic variety adapted to different soil and humidity conditions. Thankfully, Piura has both naturally. It is believed that cacao was taken to Piura from the jungle thousands of years ago, and small collectives of trees survived along the waterways, fed from rain in the Andes to the ocean, allowing them to adapt over time.
Piura has long been one of Peru’s top preforming departments for producing cacao when it comes to quality. It was the bean that the Spanish determined should be utilised for premium cacao production. Cacao from Piura boasts an incredibly low fat content, meaning the flavour producing solids shine, allowing for bold flavours.
We have carefully selected Joe Huachez as our producer for this cacao after visiting Piura in 2024. He is dedicated to the protection and production of pure Piura genetics, and believes in promoting the name of Piura cacao to the world. His fermentation is excellent, with some unique techniques added, and we are thankful to be able to work with and support him.
