Tasting notes: Vibrant nectarine, golden peach, honeydew melon
THE CHOCOLATE:
In the far north of Cusco, as the steep mountains wind into low-lying valleys in high Pichari, the Laura family are passionately producing a range of single-harvest cacaos on their farm, Nueva Esperanza. The VRAE 99 is a special variety, known for its gentle and moreish flavour profile.
VRAE 99, unlike most of our other origins, is not a pure native genetic. It is the product of natural selection, originating spontaneously in the cacao fields through biodiversity in the VRAE region. It was recorded as a cacao with great aromatic potential and was assigned the name VRAE 99 based on where it was found, and the number associated is its passport code for study.
Through genetic testing published by Ebert Thomas in the journal of genetic biodiversity of cacao 2023, it was determined that VRAE 99 was the child of Scavina, ICS 1 cultivar and Huallagasatipo-VRAEM. A true hybrid genetic.
The Laura Family have been working with cacao in the lower VRAE region for over 50 years, and have focused their efforts on separately planting single genetic varieties across their farm. An immense amount of effort has gone into understanding how each genetic operates and thrives during fermentation to extract the perfect flavour profile. Their VRAE 99 achieved a gold medal at the outstanding cacao awards in Amsterdam in 2022, and we think its not hard to see why
