Tasting notes: Baked brownie, tropical fruits, caramelised nuts
THE CHOCOLATE:
A heritage cacao farmed by a passionate family. Chunchos are an endemic genetic variety of cacao found exclusively at high altitude in the South Peruvian Jungle. They boast an incredible flavour complexity and high fat content leading to a gentle melt. The cacao used for this bar is a carefully curated blend of the Puma family’s best genetics, hand harvested from their small farm and fermented in small batches by Efraín.
Venturing north from Quillabamba, the home of Cusco’s premier cacao, we discovered an extraordinary family farming world class cacao. 3 generations of the Puma family have farmed the land, with the earlier refusing to cut down the native Chuncho trees in favour for the more prolific modern hybrids as most of the other farmers in the area did. They now have a 54 acre farm, planted in sections with single varieties of chuncho genetics, with their favourites being the Seniorita and Pumaco.
Each batch of their specialty cacao is fermented in nano batches of just 80 kg, leading to many different flavour profiles coming from the fermentations around the year.
Chunchos are known for their complex flavour profiles and their high fat content leading to beautiful melts, and this premium blend is no exception.
