Origin: Peru, Junín, Ayacucho and Cuzco departments, Isolated rural Peru.
Tasting Notes: Cherimoya, MandarinLocated in the mid-southern Peruvian jungle at the crossroads of the Junin, Ayacucho and Cuzcoregions lies the farming region known as the Valley of Rivers (known locally as VRAE). In this isolated rural area, years of Government and University investment has helped the local cocoa farmers expand their knowledge and farming practices. This combined with the VRAE’s beautifully associated terroir has led them to prioritise the aromatic aspects of their cocoa.
Genetics: VRAE-99, VRAE-15, Chuncho, Native Varieties Fermentation: 6 Day fermentation in sweet Tornillo wood using an escalator system with daily rotation after the first two days. The beans are then dried undercover.
